Two questions

Two questions:

1. Can I activate ability like Olivia's Dragoon ability more than 1 time a turn? when she already got flying?

2. can defending player block with multiple creatures 1 attacking creature?

You may activate abilities of permanents as many times as you can pay the cost, unless it specifically says you can only do it a certain number of times, which Olivia's Dragoon does not. (Instill Energy is an example of a card with such a restriction). So as long as you have a card to discard, you may activate the ability even if it already has flying.

The defending player is certainly allowed to declare more then one creature as a blocker against an attacking creature.
