Token Copy of Headless Rider

I wanted to be sure of this, but if I get a token copy of Headless Rider and it dies, I would get a Zombie token.

That is correct. Headless Rider triggers when it dies, regardless of if it was a token, or when another non-token zombie you control dies.

Not in the question, but related. If you have a non-token and a token Headless Rider out you will get two zombies if the non-token dies but only one if the token copy dies.
