Stubborn Denial and pump

I cast Stubborn Denial can I pass priority(to find out if my opponent will counter it/cast something) and then cast Giant Growth to make a creature have 4 power?

Well, technically you can pass to see what your opponent will do, but you probably won't get what you want out of it.

If all players pass in succession then the topmost object on the stack resolves (or the game goes to the next step/phase if the stack is empty). If you pass and your opponent also passes then Stubborn Denial will start resolving, and you won't get another chance to make a response.

Not really. Once yo pass priority your opponent has two options: do something or not do anything. If they do something (like counter it or kill a creature) then you can respond with a pump spell but if they don't do anything then the spell will resolve and you won't be able to cast Giant Growth before the spell resolves.
