Springleaf Drum says tap, tap an untapped creature you control: Add one mana of any color to your mana pool. The colon is the cost correct? if so can I play a Desecration Demon that turn and tap it even though it has summoning sickness?

yes. Summoning Sickness effects abilities that include tapping that are on that creature. Since Springleaf Drum is tapping it, then you can tap it.

Close: everything to the left of the colon is the cost of the activated ability. The colon just separates the cost and the effect.

And yes you map tap a summoned sick creature, as the creature isn't using the ability himself.

Addendum: Summoning sickness also only applies to abilities with the tap/untap symbol. Abilities like "Tap an untapped elf you control: Gain 1 life" could be used even while the creature is summoning sick, tapping itself.
