Soul Tithe (or any enchantment for that matter) and Faith's Reward

If I've cast Soul Tithe on one of my opponent's nonland permanents, and they decided to sacrifice, and I cast Faith's Reward , can I pick a new target for Soul Tithe upon its return to the battlefield? I assume I can, but I want to be sure.

In the same vein, if an enchantment creature were returned to the battlefield this way, can I choose whether it returns as an enchantment or a creature, or does it return as whatever it was when it left?

For the first bit, you can check the rulings on Gatherer for Faith's Reward :

7/1/2012 You choose what an Aura card put onto the battlefield this way will enchant. You can't choose any permanent cards entering the battlefield at the same time as that Aura. If there's nothing legal for the Aura to enchant, it stays in the graveyard.

As for the second bit, here's a Gatherer ruling on a random bestow card:

9/15/2013 If a permanent with bestow enters the battlefield by any method other than being cast, it will be an enchantment creature. You cant choose to pay the bestow cost and have it become an Aura.
