Removing a declared blocker

So lets say I'm attacking with Creature A and my opponent declares a blocker with creature B. After my opponent declares blockers I Lightning Bolt creature B and it dies. Will the damage creature A does go through to my opponent because creature B is now gone?

Unless A has trample, no damage will be dealt. In the case of trample, you can assign all damage to the player.

IF the creature is legally blocked, it does not matter if the blocking creature vanishes in a puff of smoke afterwards or the attacker gains flying or anything else.

Once an attacking creature is blocked, it remains blocked for the rest of combat. This status applies even if there are no longer any blocking creatures assigned to that attacking creature. Similarly, if applies even if the attacking creature gains evasion that would change how it could be blocked. Nothing retroactively "undoes" a block.

Remember that a blocked creature can only deal combat damage to its blockers unless it has trample. If no blockers remain, then the creature will either deal no combat damage (if it doesn't have trample) or combat damage to the defending player or planeswalker (if it does have trample).
