Quirion Ranger return a forest, replay and tap again

I have 4 forests, Quirion Ranger , and Elvish Visionary in play and I haven't played a land this turn.
I have a Thornling in my hand which I want to cast.
I tap 4 forests and float 4 green mana. Can I bounce a forest via the ranger, replay it and tap it again for 1 more and a total of 5 green mana to cast my 5 CMC Thornling?
I'm asking because a friend thinks you have to have all the mana at the time before playing a creature. He just started playing about a year ago and doesn't think I can cast my creature that way.

You're right about this. I think your friend thinks the way he does because something was explained to him incorrectly. Though part of the process of casting a spell allows you to activate mana abilities to pay for it, you aren't required to wait until this point in time to make the mana. You can add mana to your mana pool any time you're able to activate the mana ability, and it will stay in the pool until the current step/phase ends or until you spend it on something (whichever comes first).
Something I've noticed - and I'm not sure if it's completely true - is that it seems a player who first learned the game in the last few years will tend to announce a spell and then activate mana abilities, but a player who learned a long time ago will tend to tap lands first and then announce the spell. Has anyone else noticed this, or am I the only one?

Oh, another question just sprung up. Do I have untap a creature in play for the Rangers ability to resolve and work in the first place?

You just have to target a legal creature with the ability; it doesn't matter if the creature is tapped or not. Untapping an untapped creature effectively does nothing,. but the ability still resolves.

Yes, you can do that. Mana goes into your "mana pool" when generated, and it only leaves when it is spent or you move onto the next phase.
