Protection from X vs Destroy all

I know that hexproof/shroud will not protect a creature from a card like Day of Judgment but does protection from white protect from Day of Judgment and other spells that don't target anything specific?

Yes. Day of Judgment is a white spell, so if you play a spell that makes your creatures pro-white it would save them.

No.
Protection does four things:
- Damage is reduced to zero
- Can't be enchanted
- Can't be blocked
- Can't be targeted
(You can remember this by the acronym of DEBT).
So, as you can see protection from white will not prevent a creature from being destroyed by Day of Judgment . However, protection from red will protect from Pyroclasm as the damage would be reduced to zero.

Damage from [blah] sources is preventedEnchantments and Equipment that are [blah] can't be attached[blah] creatures can't Block itIt can't be the Target of [blah] spells or abilities from [blah] sources.
Day of Judgment doesn't do any of these things, so protection doesn't defend against it.
