While on the stack, Mistcutter Hydra 's CMC is X+G. In this case, its CMC is 5, so Plasm Capture 's delayed triggered ability will add five mana in any combination of colors to your mana pool.

Yes, you'll get 5. Everywhere but the stack, a card with X in it will be equal to 0. On the stack though, the X has the chosen value. And the stack is of course where the spell would have to be if you were to counter it.

Also, always check Gatherer first:

  • If the countered spell had X in its mana cost, include the value chosen for that X when determining how much mana to add to your pool. For example, if you counter a spell that costs XR with X equal to 5, you'll add six mana to your mana pool.

Note that Mistcutter Hydra can't be countered, so Plasm Capture can't interact with it at all. With a different X spell such as Rakdos's Return though, what Epochalyptik and GreatSword is true.

@TitansFTW: "Can't be countered" only means exactly that. Uncounterable spells are not illegal targets for counterspells, and Plasm Capture 's mana-producing DTA will be created and trigger regardless of whether the spell was countered or not. The DTA is not dependent on the spell being countered.

Sorry, I misread Plasm Capture . I thought it only added the mana if the spell was countered. I apologise.
