Olivia Voldaren + Hexproof

Let's say i have an Olivia Voldaren on the field and i pay 2 mana to use her first ability and target a creature with hexproof. It doesn't receive damage, it doesn't become a vampire, but does Olivia still get the +1/+1 counter? Cause it doesn't say that it only gets the counter if the creature is dealt damage. Thanks in advance
You can't target the creature with hexproof in the first place. You cannot even use the ability since you don't have a legal target (assuming that's the only creature the opponent controls).

if, however, you targeted perhaps a Glistener Elf which then had card:Ranger's Guile cast upon it, the ability would resolve, but the elf will not be dealt damage.
I am not actually sure if this is correct, so please correct me if I am wrong!

IIRC You can make a creature hexproof with an instant or activated ability in response to it being targeted by a spell or ability. The hexproofing would resolve before the spell/ability and the spell/ability would fizzle.
Of course, in response to you making it hexproof your opponent may use another instant to kill it... but then you could use an instant to make it hexproof in response, etc.
So if a creature is hexproof by the time a spell targeting it resolves, the spell fizzles.

ok, so the ability fizzles and there is no +1/+1 counter. I has feared that this was the case.

Do note that a spell or ability will only be countered on resolution if all of its targets are illegal at the point of resolution.
If a spell or ability has more than one target, it will attempt to do as much as possible, before being countered on resolution.
For example, Bone to Ash will be countered on resolution if the spell it is targeting was exiled by something else in response to Bone to Ash being cast. The person who cast Bone to Ash will not draw a card.
However, Lost in the Mist targeting a spell that was then exiled by Nivmagus Elemental in response will still return a target permanent to its owner's hand as long as one or more targets are still legal upon resolution.

Hexproof only means "this permanent can't be the target of spells or abilities your opponents control." It doesn't stop damage or other effects from affecting something.
You can't target something with hexproof unless you control it. Therefore, you can't activate Olivia Voldaren 's ability targeting a permanent with hexproof that another player controls.
If the ability is legally activated and resolved, then Olivia Voldaren will get the +1/+1 counter regardless of whether or not damage was actually dealt.
