can I decide to have no creatures block with Odric, Master Tactician

Yes. When you choose which creatures block, it is perfectly acceptable to choose that no creatures block.

Absolutely yes. Odric says "which creatures block this turn" which allows you to choose from the minimum of none, up to the maximum of all. Note that all blocks you choose must be legal. You can't for example order a creature without flying or reach to block a creature with flying, or order a single creature to block a creature that can only be blocked by two or more creatures (for example a creature enchanted with Madcap Skills ).
