new ezuri and undying?

Say that I have Ezuri, Claw of Progress out and I play Young Wolf. that's one counter for me. then [[young wolf "dies" and comes back with his counter. would I get another counter thanks to ezuri or would I be stuck with one?

You would get another experience counter because Young Wolf is entering the battlefield again (this time as a 2/2). Ezuri, Claw of Progress's first ability's trigger condition is met.
