Need help with the effect UNDYING???

Say if I use Zombie Infestation and sacrifice Butcher Ghoul from my hand. Does he then come on the battlefield as a 2/2?

No. Firstly, you don't sacrifice from your hand, you discard it. Secondly, Undying only works from the battlefield. When Undying says "When this creature dies...", it's saying, "When this creature moves from the battlefield to the graveyard...".
