Mimic Vat and Unearth

Suppose I use the ability of Sedris, the Traitor King to unearth a creature (anything, Storm Crow even) and I have Mimic Vat in play. If the unearthed creature dies to something like combat or a sacrifice effect, am I able to Imprint it to Mimic Vat, rather than have it be exiled to the unearth trigger?

No, the unearthed creature can't be imprinted on the Mimic Vat. Part of Unearth's full rules text is that if the creature would leave the battlefield, you exile it instead of putting it anywhere else. It's a replacement effect, not a trigger, so that means the creature never goes to the graveyard and doesn't trigger Mimic Vat's ability.

No. Mimic Vat requires a creature to die (that is, be put into the graveyard from the battlefield) to trigger. If an unearthed creature would die (or be put in any zone other than exile) it instead gets sent to exile. Because dying was replaced by another action, Mimic Vat will not trigger.

reading the card explains the card. the vat clearly states that the creature must be put in the grave, and unearth very clearly states the creature is exiled.
