Can i sac tokens to trigger the +1/+1 counter ability on Lumberknot?

Yes! Provided you have a sac outlet such as Ashnod's Altar, you most certainly can. Creature tokens are still creatures, so anything that would trigger off of a creature dying would trigger off of a token dying.

Just so you know: the key thing behind this interaction is that dying tokens do go to the graveyard for a short moment before they stop existing. They don't stay there long enough for a player to interact with them in any meaningful way, but they will trigger abilities that look for objects going to the graveyard.
