Is it possible to target things in your graveyard with Liquimetal Coating ?

No. A permanent is a card on the battlefield. Cards in other zones are just cards. Therefore, cards in graveyards don't meet the targeting restrictions of Liquimetal Coating .

So wait, if I make a Delver of Secrets Flip an artifact, then it dies, is it an artifact in the graveyard?

No. When a permanent card is moved to a zone other than the battlefield, it loses all of its permanent types. So Delver of Secrets Flip would become simply a creature card. Not an artifact, not a creature, just a creature card.

More accurately, when a card transitions from one zone to another, it loses all changes made to it in the previous zone and enters the new one in its default state as only what is written on the card itself.

No. Cards are only permanents when they are on the battlefield.
