so lets say i have Thrummingbird
which has Phyresis
on it. Does it do damage? or is infect not combat damage?

Infect is in and of itself not combat damage. Declaring an attack with a creature and it not being blocked, provided no other abilities dictate otherwise, is combat damage.
So to answer what I think you are asking.
If you attack with a Thrummingbird that isn't blocked and deal damage to a player while the bird has Phyresis on it it woud deal one point of combat damage that would be applied as a poison counter due to infect and then its triggered ability for proliferating would resolve thus allowing you to put another counter of any type that is on something onto that something.
In this case the end result could be a player with 2 poison counters on it(assuming the defending player had no other poison counters on them at the time of the attack)
