if i play a card like Wildwood Scourge for 5 and then put Helm of the Host on it would the copy spawn with 5 as well?

No. When a creature with x in its mana cost enters from a zone other than the stack, x is treated as 0.
From Helm of the Host's gatherer page:
4/27/2018 If the copied creature has Variable in its mana cost, X is considered to be 0.
