if you sacrifice a creature does it die

So I was thinking Lolth, Spider Queen passive says if you creature control dies put a loyalty counter on her. So if you had like 8 pest tokens then you sacrifice them with say Plumb the Forbidden does sacrifice them count as them dying.

To answer your question, generally yes. Something “dies” if it moves from the battlefield to the graveyard, regardless of why it made that move. Sacrificing a creature moves it from the battlefield to the graveyard, so it satisfies the definition of dying.

I say generally because there are situations where sacrificing does not result in something dying. If Rest in Peace or a simile replacement effect keeps the sacrificed object from moving to the graveyard, then it can be sacrificed without dying.
