If I were to play Fiend Hunter, could I cast a Void Snare to return it to my hand before its ETB resolves.

There is a trick where if you play a card like Fiend Hunter and remove it from play before its ETB effect resolves, the creature will be permanently exiled. Can I use Void Snare to accomplish this or does it need to activate at instant speed?

No, it needs to be instant speed. The trick involves bouncing the Fiend Hunter while the enter-the-battlefield trigger is on the stack and sorceries can only be cast while the stack is completely empty.

Technical nitpick: "Activate" is a special term used only in reference to activated abilities. You don't activate a spell; you cast it.
