If I have Unholy Citadel, and I have Phage the Untouchable, and two other legendaries in a band, and they get blocked by Hired Poisoner, and two other creatures, how will combat damage be assigned to the creatures blocking the band?

I don't know how damage will be assigned to the blocking creatures in an instance of multiple creatures not in band blocking a band. Pseudo-deathtouch, deathtouch, and trample complicate blocking and bands as well and I'd like to know how those interactions play out.

When a creature is blocked by multiple creature, the attacking player choose a damage assignment order (DAO), i.e. how much damage will be dealt and in what order. Likewise, if a creature blocks multiple creatures (such as Avatar of Hope), the defending player chooses a damage assignment order after the attacking player has chosen their DAO.
Banding adjusts this slightly. When the second DAO is chosen, the attacking player chooses it not the defending player.
So for your example, you'll choose how much damage each creature in your band will deal to each blocking creature. Then, you'll choose where the damage from your opponent's creatures will go.
One thing to bare in mind, trampling damage over is optional.
