If an opponent removes all counters from my Eternity Vessel as I trigger its landfall, will my life total become zero?

Suppose my Eternity Vessel has 20 charge counters on it, and I play an Island. When the Island enters the battlefield, I have my life total become 20 with the Eternity Vessel. If my opponent sacrifices their Vampire Hexmage in response to remove all the counters from the Vessel, then its ability will resolve with 0 counters on it. Does this mean my life total will become 0?
Don't forget that Eternity Vessel says "you may have your life total..." which is important in this case. Triggered abilities like landfall always go on the stack but if there is a "may" clause its controller chooses whether or not to use it at the time of it's resolution.
So, in this case, yes, your opponent can remove all the counters from Eternity Vessel by responding to the triggered landfall ability but you do not have to choose to have your life total become 0.

Although it doesn't matter in this situation, no one can respond to a land entering the battlefield.
Now that I have said that: I believe this is what will happen. As the land enters the battlefield, you trigger Eternity Vessel s Landfall ability, which will go on the stack, allowing your opponent to respond. He sacrifices his Vampire Hexmage targeting the Vessel. You both pass priority. The Hexmage resolves, reducing the Vessels counters to 0, then the Vessel resolves, reducing your life to 0.
