How does Soul Separator interact with Mortivore and other characteristic-defining-ability creatures?

There are 14 creatures in all graveyards, including Mortivore in my own. I activate Soul Separator targeting the Mortivore. I get a spirit with "mana symbol b: Regenerate ~", but what are the p/t's of the zombie and spirit?

I assume the flyer is 1/1 due to the "except" clause on separator, but I think layers are involved and that always kills me.
