How does Mimic Vat follow a melded creature dying? (712.4c)

Brisela, Voice of Nightmares dies while a player controls a Mimic Vat. The game sees one permanent leaving the battlefield, and the controller of the Mimic Vat makes one choice whether to exile both or neither card.

But since two cards are in exile, does Mimic Vat now see them separately, or can it create a token of Brisela, Voice of Nightmares? Also, in the case that it sees the cards separately, does the controller of Mimic Vat's ability have the option to change which card the ability is copying each new time it is activated?

"If a melded permanent dies and triggers Mimic Vat's triggered ability, both of its component cards are exiled. As Mimic Vat's second ability resolves, its controller chooses one of those cards to make a token copy of."

Brisela doesn't work with Vat because even if you can put out a copy of both of the angels in the same turn, tokens cease to exist when exiled and cant be melded.

701.35b Only two cards belonging to the same meld pair can be melded. Tokens, cards that arent meld cards, or meld cards that dont form a meld pair cant be melded.
