Hexproof, Shroud and Dissipation Field

If I understand this correctly, Dissipation Field uses a triggered ability. Hexproof creatures or creatures equipped with Lightning Greaves can't be the target of abilities, so they can attack a player with a Dissipation Field and not have to return to owner's hand?

No. Although you are correct in stating that Dissipation Field uses a triggered ability, you overlooked the fact that Dissipation Field 's ability doesn't target anything.

A spell or ability only targets if its text uses the word target.

They will be affected by it, because hexproof and shroud only prohibit targeting and cards do not target unless they specifically use the word "target" in their text.

How about protection from blue? Would that help you against a Dissipation Field ?

I'm thinking pro-blue wouldn't help because again there's no targetting.

Protection from X means:

  1. All damage that would be dealt to this object by a source of quality X is prevented.
  2. This object can't be equipped or enchanted by permanents of quality X.
  3. This object can't be blocked by creatures of quality X.
  4. This object can't be the target of spells or abilities of quality X.

Because Dissipation Field doesn't do anything protection would stop or prevent, protection from blue won't keep a permanent from being returned to its owner's hand as a result of Dissipation Field 's ability.
