Gutter Grime counters and Ooze power/toughness

What if my opponent casts a Day of Judgment and kills my 5 creatures and Gutter Grime is on the battlefield, will Gutter Grime create 5 Ooze Tokens with 5 power and 5 toughness?

For example, if your opponent controls Elesh Norn, Grand Cenobite , you would only get 3 5/5 Oozes since the first two made would have died.

Wouldn't Elesh Norn be destroyed by that time so you would still get the 5 5/5 oozes? Assuming Day of Judgement was how they were created?

More than likely yes. However, if she is equipped/enchanted with something that makes her Indestructable or something similar, then no. It is an extreme circumstance, but it can happen. Mozerdozer was merely using her as an example. There are other non-creature cards that do the same thing.

it is also important to know that if your opponent somehow gets rid of gutter grime all your ooze creatures will go with it because they become 0/0's and die due to SBA.

That is the end result, but the process has subtle nuances about it.
Your Gutter Grime will trigger five separate times - one for each creature's death. These triggers will resolve separately.
Gutter Grime has only a single ability, but that ability is responsible for multiple things happening. First, when a Gutter Grime's triggered ability resolves, its controller puts a slime counter on it. Then, as part of the same ability, that player also puts an Ooze token onto the battlefield with "This creature's power and toughness are each equal to the number of slime counters on Gutter Grime."
The Characteristic-Defining Ability of the tokens will cause them to constantly update their P/Ts in accordance to any changes in the number of slime counters on Gutter Grime.
Therefore, Gutter Grime will first gain a slime counter and create a 1/1 token. Then, it will gain another slime counter, the original token will become a 2/2, and Gutter Grime will create another token (also a 2/2). This process will repeat until 5 counters and 5 tokens are out.
This is important to note if your opponent had some effect which was relevant to the power or toughness of your creatures.
9/22/2011: The power and toughness of the Ooze tokens will constantly update as Gutter Grime accumulates slime counters.
