Exsanguinate

Say I have a Gideon Jura on the battlefield and my friend plays an Exsanguinate . Would both he and I lose, say, 6 life gaining him a net total of 12?

No, exsanguinate states opponents loses life Gideon is a planeswalker, he'd have to have damage redirected to gideon via burn spell CB dmg etc etc, planeswalkers can't lose life. so no if it is just you and you friend he'd just gain the 6 life. If you were doing a multi-player game he'll have alot more.

Gideon wouldn't loose life because Gideon doesn't have life to loose. Gideon has loyalty counters.

robbedobb69 is right. Some people explain Planeswalkers as being "like players", but that explanation just causes confusion and misunderstandings about how they really work. The only thing Planeswalkers have in common with players is that they can be attacked by creatures. They don't count as players, and effects that reference players, opponents, teammates, etc. don't do anything to them.

Note that noncombat damage you would deal to an opponent can be redirected to a Planeswalker he controls, but that doesn't apply in the case of Exsanguinate because it causes loss of life, not damage. Damage and loss of life are usually closely related, but they're not the same thing (infect is a great example of damage not causing loss of life).
