Eldrazi Mimic with Walker of the Wastes

Say I have 5 Wastes and an Eldrazi Mimic on the field. When I play my Walker of the Wastes and he comes in as a 9/9 can I trigger Mimic's ability to make him a 9/9 as well or would he check Walker's p/t as he enters and only be a 5/5? Thanks!

I thought if a card had a "may" ability and you fail to announce the trigger you miss it?

It will still trigger regardless because it's conditions have been met.
You cannot intentionally skip/miss a trigger unless the ability is a May ability as Eldrazi Mimic is. While the ability resolves, if it's a May ability you may choose to not do anything with it and that's that.
Purposely skipping/"forgetting" a non-may ability is considered cheating, however, and is generally frowned upon.
Note: accidentally missing non-May triggers is different though. If the trigger is beneficial to you, (Eg Soul Warden), you can still "miss" the trigger if you genuinely forget about it. Otherwise, it must happen and cannot be skipped. Like if an opponent also had out Rain of Gore, Soul Warden's ability can Not be passed, it must happen because losing 1 life due to the opponent's card is not beneficial.

Also, if Soul Warden's controller remembers the trigger later on, and it had not been a full turn cycle, the ability immediately goes on the stack or at the beginning of the next step/phase and then resolves as normal. Any mandatory actions are also done as needed.
If it had been more than 1 turn cycle, the triggered ability is ignored.

First off, it's important to note you don't choose to trigger something, it will trigger regardless.
When Walker of the Wastes enters the battlefield, its static buff will immediately be applied, it just happens. And Eldrazi Mimic will trigger. When it resolves it checks the current power and toughness of the colorless creature.
Note that while it changes its own base power and toughness, it does Not copy the colorless creature's base power and toughness.
So your Eldrazi Mimic will have Base power and toughness 9/9 until EOT.
