No. Scion of the Ur-DragonMTG Card: Scion of the Ur-Dragon will become Knollspine DragonMTG Card: Knollspine Dragon's until EOT, but because Scion of the Ur-DragonMTG Card: Scion of the Ur-Dragon was already on the field the effect won't trigger.

No. Nothing is entering the battlefield. Scion of the Ur-DragonMTG Card: Scion of the Ur-Dragon is just becoming a copy of something else while remaining where it is.

When creatures become another creature, "enter the battlefield" triggers do not activate. Also, "leaves the battlefield" triggers wouldn't activate either. the rule for this is rule 603.6a:

"Enters-the-battlefield abilities trigger when a permanent enters the battlefield. These are written, When [this object] enters the battlefield, . . . or Whenever a [type] enters the battlefield, . . . Each time an event puts one or more permanents onto the battlefield, all permanents on the battlefield (including the newcomers) are checked for any enters-the battlefield triggers that match the event."
