Do the Ordeal of Nylea, Heliod, Mogis, etc. get sacrificed immediately if the creature already has three +1/+1 counters on it?

Trying to link Sunbond and Ordeal of Heliod together in an enchantment deck, but I'm not sure if the Ordeal cards pop right away if I'm already over three +1/+1 counters.

No. You only sacrifice an Ordeal as part of the resolution of its triggered ability. The ability only triggers when the enchanted creature attacks. However, the ability does count all counters on the creature, regardless of what effect(s) put them there.
