Chromium the Mutable + Octopus Umbra

If I enchant Chromium, the Mutable with Octopus Umbra, will he be a 1/1 or an 8/8 after using his ability and discarding a card?

It'll be a 1/1. If two conflicting effects are trying to set a characteristic to a specific value then the newest one wins out. In your example Chromium goes from 7/7 to 8/8 after you play the Umbra. When you activate Chromium's ability it will go down to 1/1. Chromium will go back to 8/8 after the effect of its ability wears off at the end of the turn.
