Can I block a ring bearer and then cast an instant to increase the power of my blocker?

Situation:
-My opponent declares their attacker, it is a 1/3 creature.
-Their attacker is the ring bearer with "Your Ring-bearer is legendary and can't be blocked by creatures with greater power"
-I declare my blocker, it is a 1/1 creature
-Before damage is dealt, I cast an instant to increase the power/ toughness of my blocker to a 3/3.
Is this legal even though the ring bearer cannot be blocked by creatures of greater power? Or is it because I blocked with a creature of equal power first and then increased it after I declared my blocker?

Once blockers are declared, that's set in stone. Even casting a removal spell on a blocker doesn't cause the attacking creature to become unblocked.
So yes, casting a pump spell after declaring blocks is perfectly fine here.

This is perfectly fine. At the time blockers were declared the power of your creature met the requirements to block. What happens after then is irrelevant.
