Can God-Eternal Bontu sacrifice her own aura?

If I cast an Animate Dead on God-Eternal Bontu , bringing Bontu out of the yard, can she target Animate Dead with her ETB?

It isn't "targeting" the things you sacrifice, but yes, that works.
A permanent is basically any object on the battlefield. When God-Eternal Bontu enters the battlefield in your example, Animate Dead is also on the battlefield. You're allowed to sacrifice it for Bontu's triggered ability.
Note that you'll draw the cards from Bontu's ability before Animate Dead's ability forces you to sacrifice Bontu, so Bontu won't be in the library when you're drawing.
