Can endrek sahr's effect with by casting another one

If I have Endrek Sahr, Master Breeder on the field and I cast another, will the first still get to use it's ability before I have to choose one of them to be sent to the graveyard?

Additionally, does the copy I choose die? I know it's not sacrificed, but for Blood Artist's sake

You do get his ability because it triggers on cast.

As for the second question, it does count as death. Dying is defined in the game as a creature moving from the battlefield to the graveyard.
