Can enchantments I control effect my shroud.

I have a blue/green deck with Simic Sky Swallower as my shroud creature, and I am basically wondering if Bred for the Hunt is on the field, would its effect count as a spell, an ability, or neither and actually target shroud creatures.

The ability of Bred for the Hunt is a triggered ability that does not target anything. It simply triggers whenever a creature you control with a counter deals damage to a player.

Therefore, if you have a +1/+1 counter on Simic Sky Swallower you will get to draw a card.

The hard part here is getting a counter onto the Swallower.

so, would cards like Levitation effect shroud? or is it just because the effect gets triggered?

The key part here is the literal work "target".

If the spell or ability does not specifically say the word Target, then it can affect creatures with shroud.

Zephyr Charge uses the word Target so it cannot affect a creature with shroud, while Levitation does not use Target so it's ok.
