If a creature with double-strike kills its blockers on the first-strike damage, is normal combat damage assigned to the player?

Basically, if a 1/1 token blocks Fabled Hero and dies on the first strike damage, does the normal combat damage go to the player or is all of it assigned to the token?

A blocked creature stays blocked until the end of combat, even if all the blockers somehow leave the battlefield or otherwise get removed from combat. A blocked creature without trample can't assign damage to the defending player. In your example, Fabled Hero will assign and deal its "first strike" damage to the token and will not assign or deal any "normal" damage at all.

So since a creature stays blocked until the end of combat does that mean you could block a creature then use some ability and sac your blocking creature and still be safe?

Yes, that will work. Just note that if the blocking creature would be killed by combat damage, you need to sacrifice it before damage is actually dealt, otherwise you'll lose your chance to use the ability (this of course means it won't deal damage to the attacker).
