ok so if someone declares attackers one attacker has Pursuit of Flight and i block with something that doesnt have flying or reach and they activate it after blockers and give it flying is it still blocked?

Creatures with flying can't be blocked by creatures without flying or reach. Since it doesn't have flying when it is blocked, it can be blocked by nor,al creatures. Flying only affects how you can declare blockers.

Once a creature is blocked, it remains blocked until the end of combat, regardless of whether the creature blocking it dies or if it gains a form of evasion, or anything else.

Once the creature has been blocked, giving it flying, or whatever after the fact won't fix things.The creature remains blocked.
