I have a Progenitor Mimic that has copied my Indulgent Tormentor . Can I use the Mimic's ability and then all the tormentor's upkeep triggers? Don't I get to pick? So that way I would have one more trigger (3 in this case) off of a tormentor rather than 2?

You cannot. For something to trigger in your upkeep it has to be on the battlefield when the upkeep starts. So no matter how you order you triggers you will draw two cards, lose two life, and get an Indulgent Tormentor .

You can't get a trigger off the copy made by Progenitor Mimic. While you can stack the three triggers you have (2 copies of Indulgent Tormentor's ability and Progenitor Mimic's copy ability) any way you want, the token created by Progenitor Mimic will have entered the battlefield after your upkeep has begun, so it's own ability will not trigger.
