Can you target planeswalkers with spells that say target player

No. A spell can only target what the spell says it can target. Planeswalkers are not players.

That said, if the spell does DAMAGE to target player, your friend can redirect that damage to a planeswalker that target player controls.

You can, for example, target an opponent with Lightning Bolt and on resolution have the damage dealt to their planeswalker instead. As shorthand in a casual game they may specify the redirection while targeting to save time, but the decision is supposed to be on resolution. You cannot redirect damage you're dealing to yourself to one of your planeswalkers.
