Can I keep paying for Shorecrasher Elemental to have a higher def?

Can I keep paying mana into Shorecrasher Elemental's -1/+1 ability even if its after its power is zero? To get a really high defense?

Yep. Note that a creature with negative or 0 power will deal 0 damage in combat or when fighting.
