Can a creature tap to use a special ability on its way to the graveyard?

Let's say I have a Prodigal Sorcerer block a 2/2 creature.

Can I block (doing one damage) and then tap on my way out to finish off the 2/2?

Yes.

However, you have to tap and deal the damage before the combat damage step (during declare blockers step) if you want that scenario to occur.
You will not have priority in the combat damage step to do this the other way around before Prodigal Sorcerer dies.
