I've been making a database of what sets make good candidates for proxies but unfortunately I have a long way to go so I am asking the community for assistance. Anything with ,, is missing information.

Here's what I have so far:

Much, much more readable. Great info here. You should permalink this on your profile page.

Is it fine if I delete the old thread?

There's no edit function (at least, not for non-admins). Generally, I advise replying to the thread if you remember something else, but in this case it's better to have the new thread to everything in the original post is formatted properly.

I don't know if the Duel Decks make the best candidates for foil proxying because their only foils are the cover cards, which tend to be popular or unique. Same for FTV sets.

So, to make sure I'm reading this correctly, M11 would be one of the most desirable sets to take cards from? Because of relative ease, cards stay foil and the land symbols don't stay?

M14 cards are the easiest to de-ink, a strong sneeze will virtually leave you with a blank shiny foil.

Conflux is also a great choice for foils without land symbols (that i've found so far). There could be many sets between those two that should also make good choices.

Also something I forgot to include: P3K, Archenemy, Box sets, Starter sets, Planechase sets, and all sets dated before 1999 do not have any foils (except for a promo Rhox in Starter 2000)

Update:

So lately i've been filling in my database quite a lot and from what I see any set including and beyond Gatecrash is very easy and is most ideal to de-ink; A couple rubs will take off most of the foil in seconds. I've also added a couple categories including if it peels does it leave glue behind and what color foil is it. M14 is the only set i've found so far to produce a brighter silver foil instead of a very obvious rainbow foil. Will post the updated database probably in the next month or so.
