Played a lot as a teenager but was out of the game for many years, came back because of the flavor of the Innistrad block, having fun catching up on what I missed.

Alela, Artful Provocateur has been a favorite of mine. I went the direction of heavy enchantress and flying matters build. There are some good, budget cards that can fit into this kind of deck, since you mentioned that, which fit really well. Think things like Glorious Anthem , Gravitational Shift , and Favorable Winds . It's not been difficult for me to get a board full of large fliers that can easily beat down my opponents.

Another that I took in a more unusual direction is The Mimeoplasm built as a mill deck. People don't really tend to notice if you're milling libraries so you can cast your commander... and then you just keep it going. The green really only adds to being able to ramp up so you can get spells like Mind Grind to wipe out the table.

If you're running Mycosynth Lattice, then keeping the Hellkite Tyrant that comes included in the preconstructed deck isn't a bad idea. Lets you steal everything from an opponent, including lands, and they will have a hard time reacting to your impending win.

I feel like touch is becoming less reliable, though. For example typically when a new set comes out, I'll buy a booster box and a bundle box (so I have a place to store the new cards that makes it easily identifiable as to what cards are inside)

And I will find that there's a tactile different between the cards from the bundle box being smoother to the touch than the cards from the booster box, which are typically more rough/tacky. All the cards are official cards, but they feel dramatically different, and this has been going on for a couple years now. Different products seem to have different finishes on the card that makes them feel different. Preconstructed decks, like the commander preconstructed decks tend to have smoother finishes too.

The commander decks have often introduced problematic mechanics, typically when there's no way for other players at the table to interact with that mechanic. Eminence is definitely up there as a mechanic that is frustrating for people to play against because there's no way to interrupt that ability as long as the person who controls that deck never plays their commander. (I'm guilty of this running an Inalla deck that NEVER casts her)

Giving yourself access to some sort of resource that it's impossible for your opponents to interact with is the problem, and the reason I doubt we'll ever see it come back. This was the same problem Wizards was having around the same time with both the cycle of experience commanders two years earlier and energy the year before. All three gave some benefit to the person running the deck that your opponents couldn't touch.

Been buying fake/proxy cards myself for years... and I agree with the end sentiment that these vendors should be making our legitimate cards. We just had a warm spell where I live (and no homes here have air conditioning so it gets pretty warm indoors) and all my authentic cards from the recent sets all warped in their boxes while all the proxy cards still sit flat. Also I feel like the finish they use on these proxies is far superior, actually having the opposite experience as the original post. Ever since Dominaria, official cards feel somewhat rough and have a weird chemically smell to them, while the proxy cards are usually smoother and don't stick to each other like official cards do.

Though I do also agree with other points, sometimes the color is pretty off, usually a color balance issue, though, more so than how dark it is.
