if i have 2 Zombie Infestation s on the battlefield and i discard 2 cards from my hand do i get 2 2/2 zombies or do i still only get 1

Epochalyptik is right. You can't pay one cost and get 2 different benefits, in the same way you can't use a single dollar bill to get a drink from 2 different machines.

One. You have to activate Zombie Infestation to discard cards (You're not allowed to just randomly discard whenever you want to), and the cost for activating it is discarding 2 cards. You don't activate both of them and pay one cost for 2 effects, you have to pay the cost for each activation separately.

No. Zombie Infestation works on an activated ability of the type "cost: action".
Therefore, you activate a single Zombie Infestation by discarding two cards. That is the cost. The effect is that you get a 2/2 black Zombie token.
If Zombie Infestation worked on a triggered ability, like "Whenever you discard a card, put a 2/2 black Zombie token onto the battlefield", then yes, they would stack.
