What happens when I return my blocking creature to my hand?

As far as I knew, it would keep the attacking creature "blocked" and no damage would be dealt... Is this not the case? If it is, is it different for creatures with trample?

I was playing MTG Arena, my opponent attacked with a 7/6 trample/hexproof. I blocked with my 0/3 and waited until before damage, cast unsummon targeting my creature. He then cast an instant giving his creature +4/+4, resolved, unsummon resolved, then his creature hit me for 11 winning the game lol.

If I'm not mistaken, you can sacrifice a creature to do this, so I'm confused. Thanks in advance.

You are correct that the attacking creature remains blocked if you remove the blocking creature after blockers have been declared. However, trample allows you to carry over damage, even if the creature is blocked. In fact, the rules specifically state what is to happen if a blocked creature with trample has no blocking creatures when damage is assigned:

702.19c If an attacking creature with trample is blocked, but there are no creatures blocking it when damage is assigned, all its damage is assigned to the player or planeswalker it’s attacking.
