Werewolf Transformation

Ok. So I read and re-read the beast side of werewolf cards and they say "If a player cast two or more spells last turn, transform _". If A PLAYER. This leads me to believe that one player has to cast two spells and that I can play one spell and my opponent can play one spell without transforming my werewolf. Am I right or am I over thinking things?

Correct. Werewolves only transform back to Humans if a single player cast two or more spells in one turn.

You're right. 1 player has to cast two or more spells to flip those nasty werewolves to their human side.

The idea here is that Wizards realized in playtesting that it wasn't much fun if the werewolves transformed back after you try to play another creature (for example) and your opponent counters it. So yes, as explained above, ONE player, either of you, must play two spells in a turn to flip the flipped werewolves back.

If you play a creature then moonmist to transform to werewolves then end you your turn they change back right?

No. Moonmist does not state that the creatures are transformed until end of turn, so the effect does not wear off.

They stay wolves even if you cast another spell before or after? I'm glad I know now
