Voldaren Pariah Flip

When playing Voldaren Pariah  ^Flip it states that I sacrifice three other creatures. Do the creatures have to be on the battlefield or can I sacrifice creatures in my hand to transform her.

Only the battlefield. Creatures in your hand are not actually creatures.

The game refers to "creatures" as cards on the battlefield that are creatures. On the stack, they will be referred to as "creature spells". In any other zone, they will be referred to as "creature cards".

In addition to that, you can only sacrifice permanents you control. An object is only a permanent if it's on the battlefield, so you can't sacrifice objects in any other zones.
