If my opponent has Rubinia Soulsinger and I have Homeward Path and we steal one creature back and forth will that creature get stuck in a state of permanent summoning sickness?

If you haven't controlled the creature continuously since the beginning of your most recent turn (not upkeep), then it has summoning sickness. Trading it back and forth breaks the continuity.

What I mean to say is that the creature loses its summoning sickness after the next upkeep since it was brought to play/taken by another player.

Summoning sickness doesn't have anything to do with upkeeps.
302.6. A creature's activated ability with the tap symbol or the untap symbol in its activation cost can't be activated unless the creature has been under its controller's control continuously since his or her most recent turn began. A creature can't attack unless it has been under its controller's control continuously since his or her most recent turn began. This rule is informally called the "summoning sickness" rule.

And once you reach the first main phase of the next turn the creature is under your control, being after an upkeep, it can be tapped yes?

You can tap it as soon as the first time you get priority during the upkeep of the turn it starts under your control, if you want to. You don't have to wait until the main phase.

Yes It will. The creature only loses summoning sickness if it's under the control of one player successfully through an upkeep
