Spell tagets white will it target red/white

Will Iroas's Champion be targeted by Honor of the Pure? Or will any spell that targets one color effect a multicolor creature or spell with that color?

Firstly, Honor of the Pure does not target. It provides a continuous effect to all white creatures. A spell or effect targets if it specifically says "target" in the text.
Iroas's Champion will be affected by Honor of the Pure because it is white. Multicolored cards are the colors that they are a combination of. So Iroas's Champion is white AND red. Since Honor of the Pure affects white creatures, Iroas's Champion fulfills that condition.

First, Honor of the Pure doesn't target anything. A spell or ability only targets if it uses the word "target." Honor of the Pure has a static ability that just applies to white creatures.
Think of it this way. Honor of the Pure considers each creature and asks one question: "Is this creature white?" If it is, then the creature gets +1/+1. If not, it doesn't.
Iroas's Champion is both red and white. Honor of the Pure doesn't care about the red part. It just cares that Iroas's Champion is a white creature, so it gets +1/+1.

Honor of the Pure does not target, it creates a static effect that gives your white creatures +1/+1. A spell or ability never targets unless it specifically says in does.
Whenever something is checking for a quality of a card, spell, or permanent, it looks simply if it is or isn't there. Honor of the Pure only cares if the creature is white, and Iroas's Champion is red and white, so it will get the +1/+1.
