Question about Stacking

If I have an Inferno Titan and a Surtland Flinger on the field. If i attack with both and then sacrifice the inferno titan to the Surtland flinger, does the Inferno Titan still do the 3 damage for attacking or does that disappear since it was sacked?

The damage still happens. Once an ability has triggered and goes on to the stack, removing the source of the ability won't remove the trigger from the stack. If the game needs any information about the source of the ability then it will use the "last-known information" (LKI) from the moment the source last existed (for example, it might be important for another effect that the source of the damage is a red creature).
